I kept this ancient reply from I don't know who:

# lilypond book:  page x of xx:
There's a LaTeX recipe for getting that; it's documented with
fancyhdr (maybe also memoir).  So lilypond-book users can do it.  You
just say:

     \usepackage{lastpage}

and then \pageref{LastPage} gives you the number of the last page.
