Thanks for your responses. I'll make due with the current span stem engraver, but I think that it would be easier to extend the functionality of the \change Staff = "staffName" paradigm to do this more elegantly in future versions.

Just checking that you're aware that cross-staff stems were improved in late 2.15.  If you use 2.16 or 2.17 I think they work fairly well:
