when I generate the above score, the fa (F) is displayed with a 'natural' sign in front of it. How can I prevent that?

You can get it without natural like this:
\version "2.16.2"

\language "italiano"

\score {
 \relative do' {
  \key re \major
  \time 3/4
        fad
  }
}

But why?
