IMO: don’t try to do this in LilyPond. Horses for courses; this is not
the right tool.
Engrave the score for a double-size page (e.g., A3 for an A4 book).
Then use a prepress tool or even your friendly neighborhood print driver
to print each large page on two sheets. The bar breaks may not be quite
right, but you can probably tweak LilyPond a bit to get barlines to
align at the middle of the page.
