Why would you use \vcenter?  You don't _want_ the reference point to
move to the center.

Mmmh, I'm always confused about what is the reference point...
I can use \translate or \general-align instead:

\markup {
  Dal \translate #'(1 . 1) \musicglyph #"scripts.segno"
  al \translate #'(1 . 1) \musicglyph #"scripts.coda"
  poi segue
}

\markup {
  Dal \general-align #Y #-.5 \musicglyph #"scripts.segno"
  al \general-align #Y #-.5 \musicglyph #"scripts.coda"
  poi segue
}
