I don't understand your problem,
but I do this without volume adjustments,
based on several midi scores along the lines of:

\new Staff = "backing"
   { << \set Staff.midiInstrument = #"choir aahs" ..allvoices.. >> }
\new Staff = "solo"
   { << \set Staff.midiInstrument = "violin"  ..chosenvoice.. >> }
