I have to write a score which is entirely in triplets. is there a way to
avoid typing all the \times but just set a global rule so the eight note can
be automatically considered as part of a triplet?
Look for
scaleDurations
and/or
tupletSpannerDuration

I think tupletSpannerDuration isn't even necessary anymore.
You can write
\tuplet 3/2 4
now to have 3/2 tuplets with a "tupletSpannerDuration" of a quarter note.
That means you have to write the \tuplet only once.

I'm not sure when this was introduced (also the \tuplet command), but it's in 2.18 at least.
