Just the visible stencil part of the grob goes away.  You can still access
other properties of the grob, etc.

The grob (with all its properties) ceases to exist.  

When to use which will depend on what exactly you're doing and what you
want.  You'll probably have to try one and the other and see what the
difference is for any given use case.  (It might generally be safer to use
stencil #f if that does the job since it's less invasive.)
