Because the portfolio is indexed and you can quickly search for a term across all the manuals in the portfolio and see the results in a separate window.

I create it for my own use and put it on Dropbox in case it is of use to anyone else. It's quite usable on Linux if you install acroread - I use it that way myself.

If you want to combine all the manuals as a simple PDF use a tool like pdftk. But I can't see the advantage of doing it.
