This also has a spurious staff in the second system, but black… ?
Well, \break is defined as an event, and events need a bottom context.
There no longer is one, so it creates its own one.  So you need
something like
<<
    << { \new Staff ... \break } >>
    \new GrandStaff ...
or move the \break into the \new Staff somewhere.
