I'm not an iOS programmer, but fwiw, I remember a discussion about this topic from some years back.

One thing that came up is that, in iOS, it's not possible (i.e., allowed) to build a iOS lilypond app which is then called from some separate text-editor app. Thus if anything, one would have to build an editor and have lilypond running in that same app. And as for inserting Lily output (png) into yet another app, I guess that would be forbidden as well, unless you think about pushing the output to - say - a Dropbox folder. Thus that app would need to contain all viewing capabilities itself, too. And of course there's the thing with file storage - Dropbox again?

Let me put it this way, there already was serious interest in having Lilypond in iOS, and I'm pretty sure we would have some sort of example of that already, if it were a realistic thing to do. That's no proof, of course ...

Again, I'm no expert on this, just what I remember.
