Hi Mirko,

in addition to the good hints and links by Kieren, there is this visual
index of contexts, graphical objects and engravers:

It is by far not complete. But I consider it helpful in cases where you
don't know where to look at.

The red words are the contexts and they form headings of sections: all
the objects (dark blue) and engravers (light blue) in such a section are
usually in the context. The properties are then listed behind the links
to the official documentation. You can use them as

\override Context.GraphicalObject.property = value

or in \tweaks as the documentation explains.
