It's not only about extenders, it's about aligning lyrics to a melody in
general.
Moreover, the associatedVoice property can be used to switch voice
assignment etc.
The difference between setting associatedVoice to a nonexistent voice and
setting it to ##f (resp. not setting it at all) is that in case of ##f, the
lyrics won't be aligned to /any/ melody and you'll have to explicitly
specify durations.
All in all, it's the difference between using \lyricsto "..." and not using
\lyricsto "...", like in
\lyricmode { Not4 a -- ligned to a mel2 -- o -- dy }
