When setting up the connection the endpoints negotiate the codecs to use using
SDP. If you capture the packets with wireshark you can take a closer look at
how this happens. SDP doesn't specify how the endpoints decide which codec is
preferred. In linphone you can set the codec preference order, and which
codecs are enabled, in the 'Codecs' tab of the 'Preferences' window. If you
want to use only theora then you can disable all the others.
