In your board-specific configs header file (include/configs/your-header.h) you
will have a section something like this:

* Environment Configuration

#define CONFIG_ENV_OVERWRITE
#define CONFIG_BAUDRATE 115200
#define CONFIG_LOADADDR 800000 /* default location for tftp and bootm */
#define CONFIG_BOOTDELAY 3 /* -1 disables auto-boot */

#define CONFIG_EXTRA_ENV_SETTINGS \
"autoload=n\0"

#define CONFIG_BOOTCOMMAND "run ramboot"
Some of the commands are set with CONFIG_XXX macros (e.g. CONFIG_BOOTCOMMAND),
the rest go in CONFIG_EXTRA_ENV_SETTINGS.

The uboot parameters are stored in flash on your target.
You want printenv and savenv:
