You may also get useful help on the Altium forum (as this is where the TSK3000 soft core comes from) and you may well be running one of the Altium ports of lwip (depending on what version of the Altium software you have the lwip port is based on different lwip releases).

In general, though, turning on the debugs in lwipopts.h would be a good start.
