<Files *.php>
ForceType text/html
</Files>
to be added at www.gnu.org.

Yes, I think this should solve the problem.
since you do not support PHP, this should not hurt.
.symlinks is parsed by mod_rewrite so I suppose the behavior you
experience is actually normal.
I see - I thought that an actual symlink is created on disk...
