o I have updated all source files with proper copyright/license info
o I have added a README file in all directories contianing binary files which
expresses copyright
o I have updated my "COPYING" file with the new FSF address
o As well as changed all references from "COPYING.txt" to "COPYING"

I have a question about the copyright notice style... 
The page you refered me to
(http://www.gnu.org/prep/maintain/html_node/Copyright-Notices.html) says that
the Copyright notice style should be as follows:
Copyright (C) year1, year2, year3  copyright-holder

My question is... what if this software has been in development for 20, 30
years? :) ...surely you can't expect someone to list all individual years?
