I'm afraid that I don't understand what you are saying.  So you open a
remote file, then edit it, then use C-x C-s to save it.  The file that's written
to the remote host, does it have DOS or Unix line endings?  And what do you
mean "converted to DOS mode"?  Are you saying that the mode line changes to
show "(DOS)" like it would if you use C-x RET f dos RET?
