Did you try through Customize? The doc string for
`font-latex-user-keyword-classes' says:

| Setting this variable directly does not take effect;
| use M-x customize or restart Emacs.

To the OP: wouldn't it be more practical to use AUCTeX's folding
functionality to hide the argument of \hide?
