Or I was not clear enough. &define_standard_variables defines
the variables from header-vars.am, plus the variables from
%configure_vars. %configure_vars is initialized earlier when
tracing configure.ac and contains *all* AC_SUBSTed variables.
The removed definitions in header-vars.am was just an hardcoded
knowledge of which variables are always AC_SUBSTed by Autoconf
(hence not visible by simply parsing configure.ac and
aclocal.m4).
