Possibly because of your editor. I know that at least VIM (vi on at
least RedHat Linux distributions is usually aliased to `vim' in one way
or another) will use DOS EOLs if it is asked to edit a file that seems
to have all DOS EOLs. My versions prints a little `[dos]' in the info
bar when this occurs.
