You can try to use it, but if there are unrecovered parts it may be unmountable.
Unfortunately I never started ddrescue with a log file, so if I do stop it, am I right in thinking I may have to start the whole process again if the DMG is unusable?
You are right. Never start a rescue without a logfile. If everithing goes well it is easy to delete the logfile afterwards, but if there are errors the logfile can be very useful.
