I use GRUB (various versions including the one used in RH 7.2) in
VMWare both 2.0.x and 3.0 with no problems. I just set up the default
VMWare virtual machine, and went with it.
The only failure I've ever had of GRUB under VMWare was 2.0.x in an
experimental function I expected to fail based on how VMWare emulates
some BIOS functions. The normal GRUB code doesn't do such things.
My guess is that your GRUB setup is broken in general.
