Details:
I had to alter /etc/grub.d/10_linux to allow setting root=PARTUUID= which was
always been overridden by root=/dev/sdX
HyperV doesn't always allocate the disks in the same order during boot, and
using the PARTUUID works around this issue
Would it be possible to change the 10_linux file to make it easier to do this
- or even use that by default when an initrd isn't being used
