Sergey already told you how to properly rename the binary at build
time.
It is common that distributions make one imap server conflict with the
rest.
In Debian:
Package: courier-imap
Provides: imap-server
Conflicts: imap-server
Package: cyrus-imapd
Provides: imap-server
Conflicts: imap-server
Package: mailutils-imap4d
Provides: imap-server
Conflicts: imap-server
And yes, splitting the package sounds very reasonable to me.
