Because it's way easier to do the logic and debugging for the single threaded case. This is a commonly reported finding throughout the game industry. Game developers typically want control over everything that's going on, especially with respect to latency. This is easier to achieve with single threading.Probably the most important use of SMP-based POSIX threads is video games, yet the vast majority of games are single-threaded.
RISC is, sadly, the past. It failed to take hold in the marketplace because it was different from the dominant architecture, Intel. Intel munged as much of RISC as was useful to its purposes. The DEC Alpha was the best CPU in the world in 1998, and it is no more. Spent my paying career on that chip. There will of course be new RISC and VLIW architectures, but from a $$$$$$$$ standpoint their architectural characteristics are not interesting. What matters is whether they can fabricate and market in sufficient volume to give Intel a real challenge. Intel kicked the snot out of DEC because they had better fabrication and better marketing. Also, it's not clear that multicore is the future, anymore than it is that RISC is the future :)
