but it won't work until an MX record for affs.org.uk is set up.

The MX records should be something like:

  affs.org.uk   MX      10 smtp.hands.com
  affs.org.uk   MX      20 smtp2.hands.com

BTW are we planning on subscribing everyone on this list to the new
list?  If so, who or where do I get the list of addresses from?
