Theoretically, documentation about gnashpluginrc would be here:
http://www.gnu.org/software/gnash/manual/gnashuser.html#gnashrc

Practically that page is likely outdated.
The GTK gui lets you edit those directive in a visual environment.

Patches for the documentation are welcome, see
doc/C/usermanual/gnashrc.xml in the source tree.
