This does not make sense.
In a similar manner that python2 and python3 can co-exist on the
same system, you can perfectly have two versions of Tryton or GNU
Health.

There is an official GNU Health installer, that can be used for many
operating systems.
Following that installer you have a whole GNU Health system, and the
specific Tryton server under the /home/gnuhealth. This also applies
for the specific package.
"Packages" for specific operating systems / distros need to have
maintained properly, otherwise, there is no point on starting / making
such packages. Anyways, I don't use Debian, and this should be
discussed in the Debian mailing lists.
That said, there are already highly reputable Operating
Systems and GNU/Linux distros that offer the GNU Health package.
I highly recommend using the universal GNU Health installer
(gnuhealth_install.sh), and send feedback.
