That sounds like more of a backup question than a CVS question..
CVS will be ok if you do incremental backups, this is how
I do backups.
I use a combination of "find" and "tar" to do weekly full backups
and nightly incrementals. Email me privately if you need more
details.
However, this is a UNIX question ( or, if you use a commercially
supported backup system, your vendor's problem ;) and not really
a CVS one.
