Alright, thanks. I tried ktrace and the last error before sftp-server dies is "/dev/null: Device not configured". Then a google search led me back to your FAQ :).
It's working now. When the script sets up /<home/jail>/dev/null|urandom it should do a quick read to ensure they're working.
