I can't answer most of the questions that you asked, but I am sure someone
knowledgeable will draft a useful response soon.

I think the word you are translating as "ethnicity" may be for "language".
The idea of Virtual Shelves options, with Koha and other pricey library
systems, is to give a patron the sense of what he or she would see on the
same shelf (same general area) of the collection as the specific title
sought.
