You could add a command to `TeX-command-list' which runs XeLaTeX and
make that command the default for your document by setting
`TeX-command-default' in the file variables stanza.  How to add a
command to this variable has been demonstrated several times on this
list.

Or you check out the CVS version of AUCTeX where you can switch to the
XeTeX engine by setting the variable `TeX-engine'.
