I think the problem is that in your command, the dvi file is both
enclosed in double-quotes and additionally escaped with \. So please
try with
("PDF par dvipdfmx" "dvipdfmx %d" TeX-run-command nil t
:help "Produit le pdf par dvipdfmx")
