Given that you'll need a lot more stuff (like RAM and an external
flash ROM), I'd assume the STK1000 to be the more interesting option
to get started with it.

Last I've heard is that first samples have been shipped to customers.
Actual production delivery is usually 6...12 months (or so) later.
