I managed to install Atril (1.12.2) and I confirm that forward search
doesn't work, while inverse search works like a charm.  I don't
understand: in Evince everything works, I can't find anything wrong in
the code (no typo, nor wrongly hard-coded "evince", like what I did in
a previous patch).  I'd think something changed on Atril side, but I
can't even find a documentation on how to set up the D-Bus
communication for SyncTeX.

Yes, I think something is wrong with Atril, or at least the API changed. For some reason the dbus API doesn't seem to have any documentation, and I'm too lazy to look at the code. I submitted a bug report to https://github.com/mate-desktop/atril/issues/186, we'll see.
