You don't mention which version of GNU tar you're using (gtar --version).
Recent versions of GNU tar do support large files, if you have compiled
them correctly.
> gzip: stdout: File too large
This indicates that the problem is in gzip, not GNU tar. The gzip shipped
by Sun is not largefile aware. Please use this test version instead:
ftp://alpha.gnu.org/gnu/gzip/gzip-1.3.2.tar.gz
