How did you select GNU Chess? Did you type "gnuchess" in the engine
ccmmand field? Did you use the Browse button for this field to browse to
/usr/local/bin/gnuchess?

Note that the error popup does not report a failure of XBoard, but is just
how XBoard reports a failure of GNU Chess.

For me starting GNU Chess through the Load Engine dialog does work fine, BTW.
