You have to use Other->Insert LilyPond Directive to set up the
instrument name, ah - I see I have put an example in
File->Open Example->InstrumentNames.denemo
You may need to look in the LilyPond window to see how that was done.
(I am moving Denemo to the point where adding these things will be just
a menu-click...)
