It seems that you misunderstand the current problem. That

Yes, I did misunderstand. Sorry. What you see is how difficult it is
for me to remember the details of a problem across days of mail.
Now that I see what the issue is, I see why you are thinking of
storing the info explicitly somewhere.
But I wonder whether it is really important for Emacs to recover the
coding system that you specified previously with C-x RET f, when it
recovers the auto save file. Maybe it is better to define that as not
part of the job.
