I don't think the learning curve from 'knowing nothing' to 'knowing
enough to find Emacs useful' will be as steep as you might think.

Emacs is very powerful, and it can do all sorts of complex things,
but, once one has got past a few differences in how things like
copying and pasting works, it is reasonably simple to do normal
editing activities.

The more complicated things one picks up as one goes along.  Emacs is
so large, that one "picks things up as one goes along" forever!

There is a tutorial to show you the basic editing operations, and very
extensive documentation available within Emacs itself. Have a look at
the Help menu when you start Emacs.

As for setting up planner, it is not too difficult to add a simple
configuration to the start up file [a file called .emacs in your home
directory].

Yes, except that planner mode is now based on muse-mode [a new and
improved version of emacs-wiki mode]

I think it can do all of that, depending on what you mean by "contexts,
tags, or labels".  You can certainly associate a task with several
different project pages, have the task appear on a page for a
specified date, and add notes to tasks.  Does that cover what you have
in mind?
