You could also use the fluid~ external for Pd from pure-data.sf.net
and build your own GUI using Pd. A simple example is included in the
fluid~ distribution. 

The Pd fluid~ external still misses some functions available in
fluidsynth, but if you (or someone else) take a look at the source
code, you'll see, that they are easy very to add. It a bit tedious to
do that, though, that's why I didn't do it, yet... ^_^
