Default text colour definitions

I'm using the GRUB version released by Kubuntu 11.04 (1.99~rc13ubuntu3) and cannot find the location where the default text colours are held. I've installed my own background image, which avoids the default theme, hence changing the "default" colors (sic) in that location in 05_debian_theme has no discernible effect.

I can obviously edit grub.cfg, but I would prefer to stick to the GRUB way. Can anyone point me to the appropriate file, please?
