Currently, no. Grub does not currently have support for mice, let
alone touch screens. If you filed a bug report about it support might
be added. I wouldn't expect such support to be considered a high
priority though unless there are devices which would not otherwise
allow use of the grub menu. Is there no other way that you could
interact with the grub menu (outside an external keyboard)?
