You will probably get a lot of different answers to your question. In general, you can use the "print" function in Octave-forge to save your graphic in a number of formats. eps is often a good choice, but unfortunately OpenOffice will not display inserted eps graphics (although it will print fine). png seems to be the best option at the moment.
