Really?  It does not work for me, and I wouldn't expect it to, because
@tex .. @end tex is executed inside a group, so your redefinitions are
lost.  If I add this as the first line after @tex:

\globaldefs=1

Then it works.  (Ultimately, you'll have several dozen of those
redefinitions to make.)

Also, texinfo.tex expects the font layouts from Computer Modern.  The
layout for the PostScript fonts is not the same.  The result will be
that accent commands and other such things will not work. Try this:
\font\textrm=phvr7t

The "7t" is the encoding name in the TeX world for the original CM layout.
If you don't have phvr7t.tfm, you'll either need to get it or make more
redefinitions or put up with the problem.


BTW, if the original problem was getting bitmap fonts for Computer
Modern in the PDF output, let me mention that there have been outline
versions of all the standard TeX fonts available for many years, and
they've been the default in the distributions for a few years too.


Finally, I do not recommend using Helvetica as the main text font, in
any case.  Unless your document is really an advertisement or something :).
