This makes sense now (I guess Lilypond does not need to be a "programming language" per se and that is where the confusion is). I will add your replies to our Music Blocks discussion thread so that everyone from our team is in the loop about this.

An opening parenthesis after a note indicates the beginning of a slur, a
closing parenthesis means the end of a slur. 
So, in your second example the slur ends on the c'8 whereas in your first
example the closing parenthesis doesn't follow a note.
