I'm not a developer of GNU PDF, but I'll answer you.

It's very easy. You could use any available native interface in your
Java Project to use the GNU PDF library, but the final result will
GPLv3-licensed. If you use GNU PDF library's code in your port to Java
it will be GPLv3-licensed.

And an advice. GPL isn't a 20 lines license, but there is a reason. It
protects developers and doesn't let their work become propietary software.
