Storing the timestamp is bad for this obvious VCS situation.

Personally I dont bother to use quilt:

 diff -Naur original-dir modified-dir | filterdiff --remove-timestamps
>> some.patch

However 'filterdiff' isn't one the regular standard unix tools.
